How do you get passed level 6?

This is the level with the rough waters, so lots of mopping up.  First, chain, chain, chain...  Second, concerning the mopping, in order not to break a chain, wait to mop until after a chain unless they are asking for you to mop.  I.E., mopping needed while taking orders - take all orders then go back and mop.
