You've already made it this far so I'm sure you know the importance of chaining actions and color matching for big points boosts. Do let customers line up at the podium for a while until you have enough of one or two compatible types to seat them all at once, then you can chain all the actions of serving them. I always try to seat the families next to the mop to make clean ups quick. I usually try to seat the business ladies at the counter - this keeps them removed from noisier clientelle seated on the floor. I also pick up drinks, then stand at the podium to increase heart levels, then by the time I seat a bunch of people the drinks are ready again so I can drop them off to 2 tables. This really helps with the more impatient customers. Don't forget that you have the phone to call for help. Different people prefer different helpers, but for me I always call for a hostess to stand at the podium. Having a busser or another server messes up my chains and the singer isn't as useful to me since my seated customers aren't usually the ones getting upset, it is the ones waiting in line. Be careful about when you call for help though, it only lasts for a short while so don't waste it right at the beginning! On really hard levels I find it helpful too to play it part way through a couple of times to get a feel for which customers arrive when so I can plan out a bit of a strategy for seating. I hope this helps you. If you need more help you should check out the Diner Dash 2 forum - there is a tab that links you to it when you click on the game. Some really great PF members have taken a lot of time to write out very detailed instructions on how to pass just about every level. Good luck!
